Grilled Ginger and Pineapple Lamb Chops

For the Spice Rub:
For the Lamb Chops:
- 6-8 lamb chops
- 1 Tbsp oil
For the Glaze:
- 1/2 cup pineapple juice
- 1 tsp garlic
- 1 tsp Hinds Spices Pure Ground Ginger
- 2 Tbsp soy sauce
- 1 Tbsp honey
For The Salsa:
- 1 pineapple, diced
- ½ red pepper, chopped
- 1 small red onion, chopped
- ¼ cup coriander, finely chopped
- 1 Juice of lime
- Salt to taste
METHOD
Spice Rub:
- Combine the Hinds Southern Grill All-in-One Seasoning and Hinds Spices Paprika to make a spice rub.
Lamb Chops:
- Rub the spice rub generously onto the lamb chops.
- Heat oil and cook chops 3 – 5 minutes on each side, then set aside.
Glaze:
- In the same pan, add the glaze ingredients and simmer on low for 10 minutes to thicken.
- Return chops to the pan and cook for 5 minutes.
- Serve with the pineapple salsa.
Salsa:
- In a bowl, combine salsa ingredients and season.
- Toss to combine and serve with the lamb chops.
