METHOD
Place the chicken pieces in a large bowl and add the rest of the ingredients. Mix everything well. Cover, and refrigerate for 2 hours (or overnight - the longer, the better). Once ready to cook, remove the chicken from the fridge and bring to room temperature. Pre-soak the skewer sticks in water for 30 minutes.
Preheat the grill to medium-high heat. Arrange the chicken and peppers onto the soaked skewer sticks. Arrange in the following order: chicken, pepper, chicken, onion, chicken, pepper than lastly, chicken.
Oil the grilling grate. Cook for about 5 minutes on each side or until the chicken is well done.
