Dip the chicken pieces in egg then roll in the coating. Heat oil in a pot and deep-fry on a medium heat until cooked. Make the dressing by combining the mayonnaise, Hinds Mixed Herbs and water. Then spread the creamy dressing on the bread, place lettuce on top and add tomatoes, chicken, cucumber and rocket. Sprinkle with Hinds Mixed Herbs and serve with pickled onions and gherkins.
