Place the leeks, mushrooms, red onion, lemon zest and juice into an oven proof dish. Top with the chicken pieces and sprinkle over the Hinds Spices Southern Grill All in One Seasoning. Drizzle over the olive oil and add the stock and thyme. Season with salt and pepper and roast for 30 minutes at 180°c in the oven, remove from the oven and add the cream. Roast for a further 30 minutes.
Remove from the oven, top with fresh basil and serve with rice or mashed potatoes.
