Heat the olive oil in a cast iron frying pan, fry the onion and Hinds Spices Southern Grill All in One Seasoning for 3 minutes, until the onions are soft and cooked through. Add the grated corgettes and tomatoes and fry for a further 5 minutes. Season with salt and Hinds Black Pepper.
Pour over the beaten egg and let it cook for 5 minutes over a low heat on the stove. Sprinkle over the cheese and transfer to the preheated oven.
Bake for 10 minutes, until the egg is cooked through and the frittata is golden brown. Remove from the oven and serve hot or cold.
