Breakfast Bagel with Egg, Cherry Tomato, Avocado and Rocket

- 6 eggs
- ¼ cup milk
- 2 tsp (10 ml) Hinds Spices Mixed Herbs
- ½ tsp (2.5ml)
Hinds Spices Steak & Chop Spice (optional) - 1 Tbsp (15ml) olive oil
- 200g cherry tomatoes
- 1 tsp (5ml) Hinds Spices Crushed Chillies
- 2 Tbsp (30ml) butter
- ½ avocado, sliced
- 3 bagels
- 25g wild rocket
- Salt for seasoning
Hinds Spices black pepper for seasoning
METHOD
- Whisk the eggs and milk together, add the Hinds Spices Mixed Herbs and Hinds Spices Steak & Chop Spice (optional). Set aside.
- Heat the oil in a frying pan, add the tomatoes and Hinds Spices Crushed Chillies and fry for 3 minutes.
- Slice the bagels in half and toast in a toaster. Melt the butter in a pan over a medium heat and cook the eggs, scrambling them with a spatula as they cook.
- Top the bottom half of the toasted bagels with scrambled egg, cooked tomatoes, slices of avocado and wild rocket. Season and top with the bagel lids.
