INGREDIENTS

  • 300g rump
  • 1 Tbsp (15ml) olive oil
  • 1 Tbsp (15ml) Hinds Spices The Braai Spice
  • 2 tsp (10ml) Hinds Spices Mixed Herbs
  • 1 Tbsp (15ml) olive oil
  • 1 red onion, cut into rings
  • 4 pieces streaky bacon
  • 3 large potatoes, cut into chips
  • 1 cup (250ml) oil for frying
  • 1 Tbsp (15ml) Hinds Spices Chip Seasoning
  • 2 Tbsp (30ml) mayonnaise
  • 2 gherkins, sliced
  • 100g mature cheddar, grated
  • 2 x mini ciabatta rolls
  • 50g wild rocket

METHOD

  • Place the steak into a dish, drizzle with olive oil and sprinkle over Hinds Spices The Braai Spice and Hinds Spices Mixed Herbs. Set aside to marinade.
  • Heat the oil in a shallow frying pan and fry the chips for 10 minutes, until golden brown and cooked through. Remove from the oil and set aside on a paper towel. Sprinkle over the Hinds Spices Chip Seasoning.
  • Heat the oil in a frying pan and fry the onions and bacon for 5 minutes. Remove from the pan and set aside. Using the same pan, increase the heat and fry the steak over high heat for 5 minutes on each side. Remove from the pan and set aside to rest.
  • Slice the steak, cut the rolls in half and spread mayonnaise onto the base of the rolls. Top with slices of steak, crispy onions and bacon, gherkins, cheddar cheese, rocket and finally, the bun lid.
