Grapefruit, Mixed herbs and Crushed Chili Seltzer

- Place the sugar, water into a small saucepan and bring to the boil. Stir continuously until all the sugar is dissolved. Add the Hinds Spices Crushed Chillies and Hinds Spices Mixed Herbs and remove from the heat. Set aside to cool completely.
- Pour 2 tablespoons of syrup into the base of each glass, pour over ½ cup of grapefruit /Rhodes Quality Blood Orange juice, fill the glass with ice and top with soda.
- Garnish with a slice of grapefruit and a sprig of thyme.
