Place the prawns into a large bowl. Drizzle over the olive oil, add the chives and Hinds Spices Cayenne Pepper and mix well. Season with salt and set aside to marinate for 15 minutes.
Place 50g of the Hinds Southern Coating Original Batter Mix into a bowl. Pre-dust the prawns in the dry mix. Add ¾ cup of water to the remainder of the Hinds Southern Coating Original Batter Mix and whisk until smooth. Dip the pre-dusted prawns in the batter and cover evenly.
Heat oil to 180°C in a large pot and fry the prawns for 5 minutes until golden and cooked through.
