In a large frying pan or pot, heat the oil and butter then fry the spring onions.
Add the Hinds Spice for Rice and chilli flakes (optional) and stir. Then add the frozen sweetcorn and peas. Fry with the spices for 2 minutes then add the eggs (beaten with a fork). Cook for 3 minutes, add the cooked rice and stir.
Chef's Tip
Add minced meat or shredded chicken for more protein.
