INGREDIENTS

  • 8 chicken pieces, drums and thighs
  • 200g baby tomatoes
  • 250g baby potatoes, halved
  • 100g kalamata olives
  • 1 feta round, cubed
  • ½ (125ml) cup chicken stock
  • 2 Tbsp (30ml) balsamic vinegar
  • 2 Tbsp (30ml) olive oil
  • 1 Tbsp (15ml) Hinds Spices Chicken Spice
  • 1 Tbsp (15ml) Hinds Spices Parsley
  • A small handful of picked basil

METHOD

  • Preheat the oven to 180°C.
  • Place the chicken pieces, baby tomatoes, baby potatoes, olives, feta, chicken stock and balsamic vinegar into an oven tray. Drizzle with olive oil and sprinkle over Hinds Spices Chicken Spice and Hinds Spices Parsley.
  • Place the chicken into the oven and bake for 45 minutes. Remove from the oven and top with fresh basil and serve.
