- 2 Tbsp olive oil
- 1 onion, peeled and finely chopped
- 1 tsp Hinds Spices Southern Grill All in One Seasoning
- 400g courgettes, grated
- 250g cherry tomatoes, halved
- Salt and Hinds Spices Pure Black Pepper
- 6 eggs, beaten
- 100g grated cheddar cheese
METHOD
- Preheat the oven to 180°c.
- Heat the olive oil in a cast iron frying pan, fry the onion and Hinds Spices Southern Grill All in One Seasoning for 3 minutes, until the onions are soft and cooked through. Add the grated corgettes and tomatoes and fry for a further 5 minutes. Season with salt and Hinds Black Pepper.
- Pour over the beaten egg and let it cook for 5 minutes over a low heat on the stove. Sprinkle over the cheese and transfer to the preheated oven.
- Bake for 10 minutes, until the egg is cooked through and the frittata is golden brown. Remove from the oven and serve hot or cold.
