INGREDIENTS

  • 125g butter
  • 100g brown sugar
  • 10g molasses
  • 300g cake flour
  • 1 tsp bicarbonate of soda
  • 2 tsp Hinds Spices Pure Ground Ginger
  • ½ tsp mixed spice

Royal icing

  • 1 egg white
  • 300g icing sugar

METHOD

  • Firstly, cut out your gingerbread house template with baking paper. Rough guide: Cut 2x 15x15cm square side panels and 2x triangle panels, 15cm in height, and the base width also 15cm. Preheat the oven to 200°C.
  • Place all the ingredients into a large bowl and mix together until well combined. Shape into a ball, cover and refrigerate for 30 minutes.
  • Make the royal icing: whisk the egg whites until frothy, add the icing sugar one spoon at a time, whisking continuously. Place into apiping bag with a small round nozzle. Set aside until ready for use.
  • Roll the dough out to 3-4mm thick on a piece of baking paper. Use the template to cut the front, back and side panels out of the dough and remove the excess dough. Cut out 2 small gingerbread men with the remaining dough. Do not take the panels off the baking paper; transfer the panels onto a baking sheet. Cut a door into one of the panels, but do not remove it.
  • Bake in batches in the oven until it starts to brown. Approximately 10 minutes. Cut the door out and remove while still warm. Leave all the pieces to cool on a flat surface.
  • Using the icing, decorate the front panel and door with iced windows and other decorations. Decorate the roof panels. Leave to dry for a few hours.
  • Construct the house, by icing the panels together. Pipe along the inside edge of the roof panels and stick it to the sides of the front and back panel. Pipe icing along the inside and outside where the panels come together to strengthen the join. Use tins to hold them in place if you don’t have enough hands.
  • Fill in any open gaps with icing. Finish off the top of the roof where the two panels join. Once set, pipe all along the roof to look like snow, with some icing dripping down. Attach the door with icing. Finally decorate with the gingerbread men and extra decorations.
