INGREDIENTS

For the BBQ sauce:

  • 1 cup tomato sauce
  • 2 tsp Hinds Spices Barbeque Spice
  • 2 Tbsp brown sugar
  • 2 tsp Dijon mustard
  • 2 Tbsp Worcester sauce
  • 15 ml cooking oil
  • Big pinch of salt

METHOD

  • Make 2-3 deep cuts in each piece of the chicken using a sharp knife. This will allow the sauce to penetrate and flavour the chicken.
  • In a mixing bowl, add chicken thighs, garlic,onion, Hinds Spices Cayenne Pepper, Hinds Spices Southern Grill, Hinds Spices Paprika, Hinds Spices Pure Ground Ginger and salt. Using your clean hands, generously rub the seasoning all over the chicken.
  • Cover and set aside in the refrigerator to allow the seasoning to penetrate the meat, for at least 30 minutes.
  • Meanwhile in a small sauce pan, mix the tomato sauce, Hinds Spices Barbeque Spice, sugar, mustard, Worcester sauce, oil and salt. Cook over a medium heat stirring for about 5-8 minutes or until well combined and sugar is dissolved and slightly thickened. Set the BBQ sauce aside to cool.
  • Cover a large oven roasting tray with aluminium foil, the shiniest part side down. This will help with the clean-up later on.
  • Preheat the oven to 210°C. Transfer the chicken to the prepared roasting tray, arranging the thighs with enough space in between.
  • Bake in the middle of the oven, for 20 minutes,then flip the chicken over and cook for a further 10 minutes.
  • Remove from the oven and brush each chicken thigh with the homemade BBQ sauce. Return to the oven and bake for 10 minutes, then flip the chicken thighs and repeat the process again.
  • Remove the chicken thighs, then increase the oven heat slightly higher to broil. Flip the chicken skin side up and brush again with the BBQ sauce, return to the oven to char for 3-5 minutes. Keep a lookout to avoid the chicken from burning.
    Chef's Tip: For convenience purposes, store-bought BBQ sauce may substitute the homemade version.
