- 1 x 410g can
Rhodes Quality Whole Kernel Corn in Brine , drained - ½ cup all-purpose flour
- 1 tsp smoked paprika
- 1 tsp Hinds Spices Crushed Chillies
- 1 tsp Hinds Spices Parsley
- 1 egg
- 1 green onion (chopped)
- ½ cup grated parmesan, or cheese of your choice
- 1 handful coriander, (chopped)
- 1 Tbsp lime juice
- Salt and fresh cracked pepper, to taste
- 2 Tbsp oil
METHOD
- Mix together all the ingredients, and season with salt and pepper.
- Heat the oil in a large frying pan over a medium heat, and place two spoonsful of mixture into the pan at a time. Fry the fritters for 3 - 5 minutes on each side, or until golden and cooked through. Serve with Guacamole.
