Egg Fried Rice With Peas and Sweetcorn

- 200g basmati rice, cooked this will be about 700 g of cooked rice
- Canola oil, to fry
- 2 tsp butter or margarine
- 4 spring onions, sliced
- 1 Tbsp Hinds Spices Spice for Rice
- 1 tsp chilli flakes (optional)
- 140g frozen sweetcorn
- 140g cup frozen peas
- 6 large eggs, beaten
METHOD
- In a large frying pan or pot, heat the oil and butter then fry the spring onions.
- Add the Hinds Spice for Rice and chilli flakes (optional) and stir. Then add the frozen sweetcorn and peas. Fry with the spices for 2 minutes then add the eggs (beaten with a fork). Cook for 3 minutes, add the cooked rice and stir.
Chef's Tip
- Add minced meat or shredded chicken for more protein.
