INGREDIENTS

  • 200g basmati rice, cooked this will be about 700 g of cooked rice
  • Canola oil, to fry
  • 2 tsp butter or margarine
  • 4 spring onions, sliced
  • 1 Tbsp Hinds Spices Spice for Rice
  • 1 tsp chilli flakes (optional)
  • 140g frozen sweetcorn
  • 140g cup frozen peas
  • 6 large eggs, beaten

METHOD

  • In a large frying pan or pot, heat the oil and butter then fry the spring onions.
  • Add the Hinds Spice for Rice and chilli flakes (optional) and stir. Then add the frozen sweetcorn and peas. Fry with the spices for 2 minutes then add the eggs (beaten with a fork). Cook for 3 minutes, add the cooked rice and stir.

Chef's Tip

  • Add minced meat or shredded chicken for more protein.
