INGREDIENTS

  • 3 Large potatoes
  • Salt for seasoning
  • 100 g small broccoli florets, cooked
  • 200 g streaky bacon
  • 50 g grated mozzarella
  • 50 g grated cheddar
  • 1 tsp Hinds Spices Parsley
  • 4 Tbsp Caesar dressing

METHOD

  • Preheat the oven to 180°C
  • Wash and season the potatoes with salt and place onto a baking tray. Bake for 45 – 60 minutes, until cooked through.
  • Cut a criss-cross into each potato and fill with broccoli, crispy bacon and sprinkle over the cheese.
  • Serve garnished with Hinds Spices Parsley and drizzle over the Caesar dressing.
