INGREDIENTS

  • 1 410g can Rhodes Quality Whole Kernel Corn in Brine, drained
  • ½ cup (125ml) all-purpose flour
  • 1 tsp (5ml)  smoked paprika
  • 1 tsp (5ml)  Hinds Spices Crushed Chillies
  • 1 tsp (5ml)  Hinds Spices Parsley
  • 1 egg
  • 1 green onion (chopped)
  • ½ cup grated parmesan, or cheese of your choice
  • 1 handful coriander, (chopped)
  • 1 tbsp (15ml) lime juice
  • Salt and fresh cracked pepper, to taste
  • 2 tbsp (30ml)  oil

METHOD

  • Mix together all the ingredients, and season with salt and pepper.
  • Heat the oil in a large frying pan over a medium heat, and place two spoonsful of mixture into the pan at a time. Fry the fritters for 3 - 5 minutes on each side, or until golden and cooked through. Serve with Guacamole.
