- 2 cups fusilli pasta, cooked
- 1 teaspoon garlic, minced
- ½ cucumber, diced
- 1 red onion, finely chopped
- ½ cup pitted kalamata olives, chopped
- 2 feta cheese rounds, crumbled
- ½ cup Hinds Spices Parsley
- ½ cup fresh dill, finely chopped
- ¼ cup fresh mint leaves, finely chopped
Dressing:
- Hinds Spices Greek Salad Dressing Mix
- 20ml vinegar
- 45ml olive oil
METHOD
- Make the dressing by mixing the Hinds Spices Greek Salad Dressing Mix, olive oil and vinegar in a jar. Shake to mix well.
- Transfer half of the dressing to a large bowl and reserve the remaining for serving.
- Add in the cooked pasta, garlic, cucumber, onion, olives, feta and herbs to the bowl and toss to coat with the dressing.
- When ready to serve, stir in the reserved dressing.
