Ingredients

 ½ tbsp (15ml) oil
 1 onion, chopped
 2 cloves garlic, peeled and crushed
 2 cups (500g) chicken breast, cut into strips
 1 tbsp (15ml) Hinds Spices Chicken Spice
 2 large carrots, peeled and chopped
 3 celery stalks, peeled and chopped
 1 cup (250ml) green beans, chopped
 3 sprigs of fresh thyme
 2 tsp (10ml) salt
 freshly ground black pepper
 4 cups (1000ml) chicken stock
 ½ cup (125ml) cream

Method

1. In a large pot, heat the oil and sauté the onion, garlic, chicken and Hinds Spices Chicken Spice for 5 minutes.

2. Add in the carrots, celery, green beans, thyme, salt, black pepper and chicken stock.

3. Bring to the boil, reduce the heat and cover the pot with a lid. Let the soup simmer for 20-25 minutes. Stir in the cream, season to taste and serve hot.
