- 1 Tbsp olive oil
- 1 small red onion, finely chopped
- 2 cloves garlic, crushed
- 1 tsp Hinds Spices Paprika
- 2 tsp Hinds Spices Cayenne Pepper
- 1 x 410g can
Rhodes Quality Butter Beans in Brine , drained - 3 medium tomatoes, chopped
- 1 large red pepper, deseeded and diced
- fresh coriander for garnishing
METHOD
- Heat oil in a large frying pan, fry the onion and garlic for 2 minutes,add the Hinds Spices Paprika, the Hinds Spices Cayenne Pepper and Rhodes Quality Tomato Paste and fry for a further minute. Add the Rhodes Quality Butter Beans, tomatoes, and pepper and sauté for 10 minutes.
- Set aside to cool. Place half the bean mixture into a food processor and process until smooth. Fold the smooth mixture into the remaining bean mix and mix well. Serve garnished with fresh coriander.
